Hint of menthol and black, black fruit. Liquorice root. Very rugged and muscular and compact. Brambly briars, cassis, very inky. But through the deep-shadowed, dark-textured blackness lies this quite pool of wonderful cool acidity. Masculine notes of leather combined with flavors like cassis, black currant, moose and pine-needles. The white pepper spiciness and the rough tannin gave structure and the sharp, fresh acidity gives the lightness. Fermentation: 30 days mash fermneted in wodden ferneters. 50/50 new and old Barriques. 100% Barrique for 16 months.
