Gilda Bakery was founded by Jon Warren, inspired by his 15 years living in San Sebastian, Spain. He was captivated by the vibrant pintxo bar culture, where locals and visitors formed a community around shared food and conversation. The traditional 'Gilda' pintxo—a simple yet profound combination of anchovy, green olive, and pickled pepper—symbolised this ethos: high-quality ingredients transformed into something greater. Jon brought this spirit to Kent, establishing Gilda Bakery to create a similar community around artisanal bread and baked goods, celebrating the transformation of humble ingredients into nourishing, delicious food.
